It specifies "Target creature". Wich although not entirely specific is singular form. Other wise it'd said "Any number of target creatures."

The Demon would be a good idea, but the titans will give you the same effect from just attacking. Using this will make them summoning sick.

it flickers at end of turn, so wouldn't you be able to attack and flicker every turn?

On that note, would a creature with undying come back as it was before even if it died and got +1/+1?

When exiled any permanent with counters lose them. It comes back as if you played it for the first time.

There are cards you don't want to flicker though.  {Champion of the Parish} for one.  But yeah, definitely have a new-found love for this card.
