If i cast a bestow creature as an Aura on my opponents creature, and that creature dies, does the Bestow creature stay under my opponents control or under my control?

Once the creature you've enchanted dies, the enchantment creature returns to it's controller's side of the battlefield.
Example: you've enchanted opponent's {Ulamog, the infinite gyre} with {crystalline nautilus}. Then hit it with a {shock}. They'd sac ulamog and the nautilus would return to your side of the battlefield as a creature.

Good catch with the nautilus. It never occurred to me to use it that way.

Can i {Hopeful Eidolon} Someone's critter to "not worry" about their combat damage?

I don't think so, as it says the creature gets +1/+1 and has lifelink. Therefore it's controller will be gaining the life.

I could make another  thread if that'd be proper but I'd just like clarification. Does the bestowed creature simply change from aura to creature upon falling off or would that change trigger any possible etb effects, like a {souls attendant}?

I don't think so, as it says the creature gets +1/+1 and has lifelink. Therefore it's controller will be gaining the life.

Correct. The creature gains lifelink, the controller of the creature gains the life. If it was worded: "if enchanted creature deals damage, gain that much life" it would be you gaining life. It would also be a triggered ability then, so if presented with Lethal it would not save you. State based actions would lose you the game before gaining life.

702.102a: Bestow represents two static abilities, one that functions while the card with bestow is on the stack and another that functions both while it's on the stack and while it's on the battlefield. "Bestow [cost]" means "You may cast this card by paying [cost] rather than its mana cost." and "If you chose to pay this spell's bestow cost, it becomes an Aura enchantment and gains enchant creature. These effects last until one of two things happens: this spell has an illegal target as it resolves or the permanent this spell becomes, becomes unattached." Paying a card's bestow cost follows the rules for paying alternative costs in rules 601.2b and 601.2e–g.

In other words:
The permanent stays on the battlefield, it just becomes unattached and becomes an enchantment creature instead of an aura.
