{grip of chaos}'s effect applies to auras, such as {eldrazi conscription} for example, correct?

Yes an aura targets on entry so it may instead randomly enchant my bronze sable
That's no longer a bronze sable. It's now Hulk Smash mode...

This could be troublesome with a turn 15 destroy target permanent in a two headed giant. How do you target randomly as soon as you can't roll dice??

you mean you cant roll a 6 sided cause there are too many permanents? need a 20 sided or even bigger potentially. doubt theres gonna be over a hundred permanents even in an edh game. kinda tedious but you just line everything up, give the first permanent 1, second 2 etc. and then just have the excess die numbers be rerolls.

When we go back to Zendikar this must be a thing.

Shuffle all valid targets into a stack. Pick one. Return cards to where they were.

Might be a little difficult if they use sleeves.

Shuffling a sleeved deck is difficult?
Or are you talking about different colored sleeves?
Shuffle without looking at the cards. People do it in commander all the time.

i think he means two different sleeves/decks being shuffled together. not gonna be random if you can tell which deck its coming from.
