{Stuffy Doll} is out for more than 1 turn, I use {Enlarge} on it and swing for 7. It must be blocked if able. I also swing with another 7/7, my opponent chooses to not block stuffy doll and block the other creature.

Why can he do that, what's the point of {Enlarge} besides the +7/+7?

he cant do that. at the declare blockers step, he has a creature that can legally block, and a creature attacking that must be blocked. he cant choose to block the other creature.

"Creature MUST BE BLOCKED" what part is confusing (for your opponent not you) :P

7/1/2013   If the creature attacks, the defending player must assign at least one blocker to it during the declare blockers step if that player controls any creatures that could block it.

The point is that if he has a creature that is eligible to block, it Must block. He may not like it, but frankly it's the game. He must block, no matter what argument he comes up with (this is assuming he has a creature that is able to block of course).

It's not this.  It's "If that player has at least one creature that CAN block it, at least one of them HAS to block it."  There are separate abilities that says /each/ creature that is able to block it does so, like {Lure}.
