Must be blocked

If a creature has "Must be blocked by 2 or more creatures" on it and I choose to block with 2 stuffy dolls, can my opponent choose not to deal damage to one stuffy doll and do all of it's damage to the other?
Or does that mean I didn't block with 2 or more creatures and I take all the damage?

Let's say it's an 8/8 with trample...

Blocked by two or more creatures is just that. You can certainly use two stuffy dolls to satisfy this condition. Now to answer stuff you didn't really ask...

First, stuffy doll will only reflect damage done to him, so if you block a 4/4 with two stuffy dolls, they will do a combined 4 damage depending on how the attacker assigns it.

It is perfectly legal for a player to assign all the damage to one creature and leave the second untouched. They just have to assign the damage in the order they chose after blockers were declared.

For creatures with trample things get different and I'm thinking you two aren't playing this out right. Damage for trample is dished out in order to all blocking creatures just like before. You have to assign lethal damage to the first before hitting the second, but you are free to assign more. After all ceatures blocking the trample have been assigned lethal damage, the attacking player is then able to assign damage to the defending player/planeswalker. In this case, the 8/8 trample can assign 1 damage to each stuffy doll (lethal damage), and then 6 to you. Indestructible doesn't matter or count when deciding if damage is lethal. It is a future consideration. In the end, you will take 6 and your opponent 2.
