If I ult (jace architect of thought) grabbing my elspeth and a spell with storm do I get a storm count of 1 ?

702.39a: Storm is a triggered ability that functions on the stack. "Storm" means "When you cast this spell, put a copy of it onto the stack for each other spell that was cast before it this turn. If the spell has any targets, you may choose new targets for any of the copies."

Planeswalker abilities aren't spells and so won't count towards your storm count.

I'll have to double check when I get off work, but here's what it should be, based on some Gatherer entries.

When you cast the spells from the ability, you get to choose what order you cast them in.  If you cast the Elspeth and the Storm spell, you'll have a storm count of 1, since the Elspeth was cast first.

More than likely he pulled the Grapeshot out of his opponent's deck.
