Buying a new phone

So i am buying the new iphone 5s (upgrading from iphone 4s with ios 6.1), I was wondering when I use backup all and then in itunes backup my device, when I get my new phone and restore from itunes will my binders be saved?

I would backup to Dropbox, just in case.

Ahh right thanks, I used to see that option but no longer do, any thoughts on my error?
