You can pithing needle a {strangleroot giest} to stop it undying but not for things like {Wrecking ogre}s abilities right

No, that is a static ability. It has no cost and does not say "when", "whenever", or "if".

An activated ability has a " : "

Blood rush (see {slaughterhorn}) can indeed be shut off with the needle. Other abilities like undying that do not have a colon ( : ) are not effected.

Bloodrush is a mana ability, activated abilities like undying say when or whenever or if

702.92a: Undying is a triggered ability. "Undying" means "When this permanent is put into a graveyard from the battlefield, if it had no +1/+1 counters on it, return it to the battlefield under its owner's control with a +1/+1 counter on it."
