I'm sure you've seen the infinite mana combo with these cards.  My question is, if my opponent casts {Murder} on my Captain, can I loop the mana for some countering?

If he inresponses to your taping of captain of the mist no but if he targets it with murder you can in response get infinate mana

^ Nailed it. Basically "infinite" combos generally have a point where nothing is happening and the player is waiting for the stack to resolve. If the other player plays his cards right, they can stop the combo pretty easily. In this case, you're good to go, provided your opponent doesn't have more removal.
