If I use a card like Captain's Call, does each token count as a creature spell being played? Additionally, if a card lets me return a creature from my graveyard to the battlefield does that count a playing a creature spell?

{Captain's Call} is a Sorcery and not a creature spell, though it makes tokens.

A creature entering from the graveyard via a spell like {Zombify} was not cast. But {Havengul Lich} lets you cast creature cards from your gy.

So pretty much it all depends on the wording to determine whether the creature card is cast or not.

Yes.

There are so many different types of "wording" in magic. Some things say the same thing but one may have a comma in it, thus it may have the same effect in a different way.

Your best bet is to go off of the wording written right on the card. Some older cards have updated wording on Oracle (you'll see it when you look at the card in the Database)
