Qhat happens to the game when I create an infinite mana loop?  Can I just choose to end my turn or does the game end in a draw? Or other

It depends on the loop.

If the loop is truly never-ending (like 3 {oblivion ring}s with no other targets on the board) and there is no possible way to stop the effects from continuing, the game ends in a draw. 

Most loops, however, have an "out" or a stop to the sequence ("okay I have enough {restoration angel} tokens now, I'll stop tapping {Kiki-jiki, Mirror breaker} and stop looping" or "now that I have 1000 life, I'll stop my resto-angel {fiend hunter}x2 loop by targeting a new creature with one of the fiend hunters")

Then you have {Niv-Mizzet, the Firemind} and {Curiosity}. As long as you have more cards in your deck than your opponent has life, you're good. Otherwise, you'll deck out

No you won't because {curiosity} says may so you can stop the loop any time.
