No you can't. It is a colored spell, and would fall off, it has nothing to do with targeting. This kind of situation would would like {pacifism} on {Geist of saint traft} but not Emmy

If you were to cast {Sun Titan} and have it return {Pacifism} to the battlefield, you can have it enchant Emmy. It is not a spell at that point it is a permanent.

I was told by multiple people on cockatrice that circumventing with sun Titan wouldn't work with something that has protection.

emmy has protection from spells. not permanents.

Ok, so {knight of infamy} Has protection from white...is that different with this situation substituting him for emrakul and circumventing pacifism?

Yes.  Protection from white is different from protection from white SPELLS.
