Say my opponent has a creature out and wants to enchant it with a white spell. Can I use {Apostle's Blessing} to give his creature pro white and not have the spell target it? Or since it's his creature and enchantment, it doesn't matter?

Since the spell says "You control" I would say you couldn't do it. However if it just said "Target creature" you could.

People have used {Stave Off} to get rid of Auras before.

Yes to both.  Protection stops auras, and prevents targeting.

Yes to both.  Protection stops auras, and prevents targeting.

What's the reason?

Bc the protection is under my control?

Edit:  Now I see.
         Protection from white (this creature can't be blocked..... TARGETED...., by anything white).
