Do creatures that are paired with soulbond have to attack together? Better yet can one attack and one not attack?

No.  As long as they are paired, they have their sandwich. If they become unpaired, both lose the sandwich. Soulbond is a static ability.

Don't have to attack together, and yes one can and one not

Thanks Hays, I trailed off without answering the second question since I was dreaming of a sandwich.

Absolutely!  Pairing only affects things that look at "is this creature paired?"  The Soulbond abilities, {Flowering Lumberknot} and {Joint Assault} are currently the only things affected by pairing. Nothing else.
