Exalted Buff would trigger before the Angel token is created, correct? I can't see a way it wouldn't.

If u stack them in the right order then yes declaring on the giest as a attacker will trigger every exalted plus his own ability. U put his ability on the stack first followed by the exalted so they resolve first and itll work

Giest would get +1/+1 because he was the only declared attacker.
By like Irish said, you can stack the triggers, but you'll get both either way.
