My friend had a {Strangleroot Geist} out, and I killed it and the Undying activated.  Then, next turn, he attacks with it again.  I block with my 2/2 infect, does the -1/-1 counter remove the +1/+1 or does it make it so the Geist has 1 +1/+1 and 2 -1/-1's?  Would the undying trigger again or would the Geist die?

I agree with scars. It would kill it.

It would remove the +1/+1 then add a -1/-1. Which would reduce the toughness to 0 and destroy it. Then undying would trigger again.
It would come back because of undying.  It just says "When this creature dies."  So putting a -1/-1 on it would still "kill" it, would it not?

Ya the rule is saying that you are wrong. So I don't see that as a win
