How does "fighting" work with a creatures other abilities such as first strike or death touch?  Do these other abilities still apply when creatures are fighting?  What about protection from....?

protection works normally deathtouch works normally lifelink works normally first strike doesn't matter

All keywords still apply. The reason first strike and double strike won't matter is because those abilities relate to how that creature deals damage in combat. Fighting with the tracker and other {prey upon} effects is non-combat damage, so that does not apply (but the creature is still doing damage so other keywords like lifelink and deathtouch do still apply).
