Opalesence gives master a base p/t of 3/3, since master is an enchantment. I would think this overrides his normal pt.
Ruling to support:
302.4c: To determine a creature's power and toughness, start with the numbers printed in its lower right corner, then apply any applicable continuous effects. (See rule 613, "Interaction of Continuous Effects.")

So, you start at 5/5, then apply the {opalessence} effect, making him 3/3.

If an enchantment creature is turned into a creature (using Opalescence, for example), its printed power and toughness will be overwritten by the power and toughness defined by the animating effect. It will retain any supertypes and subtypes it may have had unless the animating effect specifically overwrites them.

You have that backwards.  The only thing that changes is the Power and Toughness.  If I have a Courser of Kruphix and you play Opal, Courser is now a 3/3 instead of a 2/4, but it also keeps the subtype Centuar.

But it does... It's effect overwrites the printed pt
