They {bonds of faith} a creature of mine. I {beast within} it. Who gets the beast token?

I'd say you do.  Yours is an instant that you are casting in response to being targeted by the faith card.  Plus they arent gaining control of your creature,  they are just making it unable to block or attack.

The bonds is still owned by your opponents. It's just on your creature, therefore your opponent gets the token

Why wouldn't you {beast within} your creature??  Instead of the enchantment?
