Do emblems stack? Like say someone somehow ultimates {kiora, the crashing wave} twice, do you get 2 9/9 krakens eot? Or one

Most emblems stack. Like  {Kiora, the Crashing Wave} or  {Sorin, Lord of Innistrad}
Some do not, like  {Elspeth, Knight-Errant} or  {Domri Rade}

this is also because multiple instances of the abilities given by the emblems of both Domri and Elspeth are redundant, and not that the emblem itself is redundant.

I believe they all stack because an emblem is a permanent and therefore can be destroyed or exiled:) so if you use the emblem ability twice you have two of them but they are just redundant but you still would have two.:)

Emblems are not permanents and are in the command zone.  As such you can not interact with them.

113.5. An emblem is neither a card nor a permanent. Emblem isn't a card type.
113.4. Abilities of emblems function in the command zone.

All Emblems do stack.  Although many of them supply redundant abilities.  One of the most significant of this is the {liliana of the dark realms} emblem.

A swamp would get two instances of {T}:{B}{B}{B}{B}, but you can only use of them per cost, which is tapping the land.

Thank you guys, so just to be clear, like {elspeth sun'a champion} ultimate twice would give creatures +4/+4? But flying would be redundant?

Maybe it'd be flying so super high that even flying creatures can't block them, yeah, yeah something like that, ok I'll shut up.

Then why are there emblem cards? How does that make them not a permanent?

This Ibtrickey. The exist in the command zone. As of this time, very very very few things interact in the command zone. The only one I can think of of the top of my head is  {Derevi, Empyrial Tactician}

The point of an emblem is to be a game changing effect, most of them, aside from Sorin, are very difficult to pull off.  Would it really be fair to ultimate {elspeth, knight errant} and have someone pay 3 mana for {oblivion ring} and make it worthless?

An emblem is not something you can target with something like {oblivion ring} or anything else for that matter.
