I don't see how this locks them down. They can still cast the exiled cards on their turn.

"Any time your could cast a sorcery" means "During your main phase when the stack is empty".  Because knowledge Pool's ability is still on the stack when you cast the new spell, it's not a time that you could cast a sorcery.  It's awkward, but a pain to play against.
