If me and my opponent both have an {Archetype of Endurance} on the field, how is the hexproof decided?

No one has hexproof and hexproof can't be gained by either player.

I do believe 'cant' abilities trump 'have' or 'gain' abilities. Or somethin like that

i don't believe any cards like this exist, but what would happen if a card said, "this card can't lose trample."?

It wouldn't matter because trample isn't be lost here. Hexproof is

particle

ok, obviously, i meant the same
keyword that the archetype is getting rid of.

I think they dont have cards that say you 'cant lose an ability' because it would just be complicated with superseding rules. They either have gain or lose abilities.
