So i have always been confused about this. If I want to {goblin grenade} a PW I know I can't target them but somehow I can still send the damage their way. Can somebody explain how to do this and why it is like this?

Since PWs aren't creatures or  players, they can't be targeted by things that target those types. What happens is you target the players themselves. Then, as the spell or ability is resolving, you can chose to redirect it to the PW.  By then it's too late to counter or otherwise affect the spell.
