Wow great question

I remember someone asking this at my FNM a few months ago, I don't remember why but I think your opponent gets to exile the creature. I'm not 100% though

It's all about the stack. If the creature were to die on my turn and me and my opponent both had {Mimic Vat} on the field; my vat would trigger first then my opponents. Which means my opponent would take the creature before I can, and vise versa.

Ok, and what if it's in a multiplayer game and two people have a vat and a creature dies on a completely different turn (let's say it's a third players turn, and the other two have vats, and what if there's four players or more?)

It goes APNAP (active player, non-active player) around the horn in turn order. So the player that will be last to take their turn will get to use their vat.
