Say I have {Heliod, God of the Sun} out (with devotion = more than 5 so he is a creature) then I play {Ethereal Armour} on him. Then my opponent {Supreme Verdicts} therefore all of my devotion is gone and this Heliod is not a creature. Does the armor fall off?

Yes. He becomes an invalid permanent to be enchanted by the armor, so the armor falls off

But +1/+1 counters don't fall off if it's an enchantment, is that right?

Correct - they just aren't very helpful on a permanent that isn't a creature ;) counters don't have a requirement to meet to maintain attachment, so they'll stay so long as it doesn't change zones (ie go to exile, graveyard, your hand, etc).

But once another item of devotion etb, the gods trigger to being creatures correct (new item causes devotion check?)

Giggle the Draco Genius

Since the devotion is a static ability it is always checking, even faster than state based actions. So the new object enters and the god would just know that it is a creature now without really having to check
