When using {provoke}, would I need to untapped a creature to have him block one of my attackers?

You will have to untap a creature if you want it to block one of yours, as tapped creatures cannot block:

509.1a: The defending player chooses which creatures that he or she controls, if any, will block. The chosen creatures must be untapped. For each of the chosen creatures, the defending player chooses one creature for it to block that's attacking him, her, or a planeswalker he or she controls.

However, you can choose to "untap" and already untapped creature with provoke, and it will still work the same.

Thank u! If I have all untapped creatures and my opponent attacks, can he/she use provoke on my creatures the same way with out untapping them?

Well, if they were all untapped, the untap effect wouldn't do anything to them. The forced blocking would still take effect though.
