Ok so this may be a silly question but, when I tap a vampire and {chosen of Markov} to transform her, she's untapped when transformed right?

Coffee Vampire

She stays tapped because to use the ability, you need to tap her and another vampire. So you couldn't transform her then attack with her unless you found a way to untap her.

Tap her at the other players main phase than untap her at you upkeep than atack.

Dont worry. Only us and the rest of the internet will know. Btw tap her at thier end phase just in case u need to block.

Could you declare her as a blocker if a 3/3 then transform her before combat damage is assessed to keep her alive? (thus is probably an equally as stupid question as the previous one!)

Not stupid. You could block an {Elite Inquisitor} and then transform her so she'll live.
