Progenitor Mimic on Shroud

When {progenitor mimic} enters the battlefield, say i want to copy a {simic sky swallower} could i do that or is the mimic still a spell and not a creature at this point?

Yes you can.

Shroud prevents targeting abilities, the mimic though let's you put it in as any card that is on the battlefield, without explicitly targeting something.
