I'd expose her to basic mechanics. A couple old revised/4th decks are great. The legendary {counterspell}, direct damage with {lightning bolt}s , {wrath of god} for wrath effects, just the quintessential staples of each mechanic. It should also help her find out which colours she prefers.  My girlfriend started by browsing through the binder and asking what the difference between colours was. She's all about fire and water. Now her {Niv-Mizzett, the firemind} EDH deck gives me nightmares...lol

Never face her with control. When you win she doesn't have fun. And it's obvious when you're going easy on her because you have a fist full of cards in yiur hand at all times. I have only one deck, a control deck. My brother has a more simple beat down deck...that's why he doesn't have fun and we hardly ever play. So yeah for now just stay away from control. Hard to learn and hard to play against

Start with basic stuff. Some stuff, like how to read a card (power/toughness, mana cost, etc.) should be learned right away. But other things like keywords (deathtouch, vigilance, etc.) should be taken as they come.

I detest control, anyways. Instead, we both are playing green decks (we plan to do it next weekend) so that should be relatively simple.

My question is how do you get someone interested again.  My friend used to play, but he recently started to want to play again.  How do I not let this flame of hope die out?!

If you know him pretty well, do what I did with my friends after our exams were done. Give him a deck, and play a duel to see what he remembers, then go back and follow the strategy you would use for teaching a newcomer; teach the basics, then move onto the more complicatedstuff. I also recommend that you explain effects such as death touch or haste as they get a card with it. Also, get a group of friends to regularly duel. My friends and I duel everyday at lunch, we find it very fun, and in my opinion, it helps keep me motives to win the pot(normally around $5-15). I they can't afford the costs for cards, as some of the prices are a bit crazy, like how my mythic rare card costed me L:7.65, then try to get them to play the online version. You can get it pretty cheap on steam with the weekend sales. Hope you can get him interested again!! Sorry the post is way too long.
