Say I have a 5/5 with lifelink  and I swing and they block with a 1/1 do I gain 5 or 1 life

It only takes 1 damage to kill that 1/1 but you're still dealing 5 damage.

Really wanna get at your friend, use a card with life link and double strike.
If you have a 5/5 with both, you deal a total of 10 damage and gain 10 life. :D

That would only be if the creature survives the first strike. You would only gain 5 life if the creature was 5 or less toughness.
