 {Lightmine Field}      Does this do the damage to the creatures before they do the damage to us? Or if they die does there damage still go through??

The damage is dealt after attackers are declared, and before damage is dealt. If they die due to its effect, their damage will not go through.

In regards to that same question would a 1/1 creature with exalted die because of the one damage or do the +1 +1 kick in at same time?

It depends on who controls what.

Lets say you control both. You attack, and both triggers go on the stack, both triggers are yours, so you decide what order they go off. I'd recommend putting the damage on the stack first, and then exalted, so exalted would resolve first, but hey, it's your choice!

Say you control the field, and the opponent controls the exalted creature. They attack, and cause two triggers to go off. Since they are controlled by two different sources (you and your opponent) they go on the stack in APNAP (active player, non-active player) order. That means their exalted goes on the stack first, and then your field will. The field will resolve first, and deal the damage before exalted goes off.
