If this is played during the second main phase on a creature that was cast during the first main phase can that creature attack?

If your on your second main phase then you've already pasted you combat phase.

Creatures fighting is different than combat. A creature with summing sickness can fight

A {Prey Upon} sorcery fight is different from combat ("attack" refers to combat).

Your new creature that entered the battlefield can participate in a Prey Upon fight (can be a target of that sorcery), but as usual can not attack in combat until your next turn.

What about static abilities like first strike, double strike and trample? Would they apply during the fight?

None of these would apply, as they only deal with combat damage. Fighting is not combat (as awkward as that is to say). However, effects like lifelink and deathtouch still apply, since they care about damage, not just combat damage.

Going on a bit of a tangent, will trample carry over by a blocking creature?

Trample will not take effect, again the creatures are just fighting in their own little world

It sounds like the question is whether a blocking creature with trample will assign any spare damage to the attacking player. The answer to that is no; trample only applies when the creature is attacking.
