If an opponent plays two spells two make here flip back, when it triggers on the upkeep, can I tap her in response for the two green?  Thanks.

You could however you'd have to use the mana during your upkeep seeing as your pool empties in between phases unless you have {onmnath, locus of mana}

Mana pools empty at the end of each phase AND step. If you don't use the mana during your upkeep it's gone. But you can still do it.
