If I attach ensoul artifact (the new enchantment that turns an artifact into a 5/5 creature) to an izzet keyrune then activate the keyrunes effect, will it be a 2/1 or a 5/5? Which effect will be dominate?

Are you activating the keyrune's ability in response to the enchantment? If so the artifact will be 5/5. If activated after the enchantment has resolved, then it becomes 2/1 till end of turn.

400.7a: Effects from spells, activated abilities, and triggered abilities that change the characteristics of a permanent spell on the stack continue to apply to the permanent that spell becomes.

Alright I got it. Guess I'm not playing that artifact in my izzet facts deck.

Why not?  You wouldn't need to animate it via it's second ability to still draw a card assuming it hits.  It's not a great card, but could still see playability.

It doesn't have to be animated to get its effect? I didn't know that.

The "Draw/Discard" ability isn't granted by the animation ability.  It's its own separate line, so it applies no matter how the Keyrune deals combat damage to a player.  You can Ensoul Artifact, hit a player, and get that trigger to go off.

Now, if you decide to activate the Animation ability while it's Ensouled, the ability will overwrite the Ensoul until EoT, making it a 2/1 that's Blue and Red until the end of turn, instead of the 5/5 colorless creature from the Aura.
