He reads as "of the type that land PRODUCED" therefore you would either get {G}{G} or {R}{R}

What about a land that says: "{T}: Add one mana of any one color to your mana pool." If I tapped it for {U}, it only limits the other to {U}?

That's correct, the key word is "produced" so whatever colour that you declare that you are tapping for, in the case of the any colour land, the ancient makes another one.
