If my opponent has {Ensnaring Bridge} and no hand, I have 2 {Signal Pest}, can I attack with both of them?

Yes you can. The bridge is only looking for creatures with power greater than 0. Once they are attacking, bridge no longer cares and you can feel free to pump them up before damage is dealt.
