Does a token with undying hit the field again? Or does it get exiled?

Not actually exiled, put in a nonexistent zone. That's why you can't get them back(I'm sure there's some way to get things out of exile)

There is no way to get things out of exile unless they are exiled with another card that states "You may play cards exiled with this card"

I thought there was one single card that retrieves a card from exile? Not the griffin

Wishes cannot grab cards from exile, as exile is considered a game zone. You can use them to grab a card from sideboard or any other card in your collection in casual.
A card in exile is still technically in the game.

Im fairly sure there IS a card that iteracts with exile.. Experts?

Ruling for the original question.

110.5g: A token that has left the battlefield can't move to another zone or come back onto the battlefield. If such a token would change zones, it remains in its current zone instead. It ceases to exist the next time state-based actions are checked; see rule 704.
