Does {Rubinia Soulsinger} target or do I?  Like, can I take a creature equipped with {Sword of Body and Mind}?

As a rule, whatever has the ability or the rules text is the source.  The player is never the source of anything.  The only time that a card refers to a player in this way is in the case of True-Name Nemesis, but that wording barely works within the rules, as it is.
