Some cards have an ability that might, for example, read "Exile target card from a graveyard." Does this mean that it can be your own or your opponent's graveyard?

If it doesn't say a particular graveyard, like "exile a card from target opponents graveyard", you can choose any graveyard.

Yep! The wording on magic cards are important on things like this. If it says "a graveyard" it means just that; whichever graveyard you choose.
