If I overload let's say {Street Spasm} and target one of my opponents,and I have another,will the spell target both opponents or just the initial target?

I'm assuming you mean another opponent? If so, then yes, but maybe not the way you think, based on your wording.

The spell doesn't target an opponent, it targets a creature you don't control. So when you overload it, it hits every creature you don't control. It doesn't matter if you have one or 12 opponents; any creature that isn't yours gets hit!

And because it hits all instead of target creature it should hit hexproof right?
