Annihilator 6 sounds terrifying could someone explain

When someone swings at you with a creature with Annihilator, it means you (the defending opponent) have to start sacrificing permanents. Annihilator 6 means you have to sacrifice 6 permanents. This must be done before the "declare blockers" stage.
It's quite devastating.

Do you also have to block with 6 creature after you sacrifice your permanents?  I was told if u don't have 6 creatures to block with it hits me.

No it's just removal.  Then it's like normal attacking.

It can still be blocked by 1 creature if u still have one

Heck, one {Typhiod Rat} can take out all but {Ulamog, the Infinite Gyre}. Give it wings and it can kill Xenu too!

But if I have let's say 7 creatures out even after I get rid of the 6 permanents do I have to block with 6 or can I block with one each turn till I lose

No. U can block all the damage with 1 (unless they have trample) or unless an effect such as {Pyreheart Wolf} says so. Otherwise after u sacrifice 6 permanents u can still block that with 1
