What is so good about {Sorin Markov}'s ultimate? What can you even do?

You can cast their {Lightning Bolt} on theirown creature. You can make their creatures attack yours when they normally wouldn't because you've got big fatties or death touch. You choose what cards they discard after you've cast a {Mindrot}. You choose which permanents they sacrifice.

Essentially, any legal choice they can make in their own turn, you get to choose instead.

It was more wishful thinking anyway.

You can empty their mana pool and have creatures attack they normally wouldn't attack with.

Imagine the opposite.  How would the game go if your opponent controlled your turn?

Played him in a budget legacy deck. Using his ultimate, I caused my opponent to deck himself next turn

My favorite thing to do with {Mindslaver} (close enough!) is to let then get two creatures and a {Lashwrithe} out. I control their turn and just sit back as I bounce the lash between the two creatures by paying their life 😜

Knowledge!  You get to see their hand and their draw, then you get to make them waste their removal, and tap ten out, leaving you open to do whatever you want without worrying about their response!

Hmmm let's see you're playing with a murder deck? Lets see your hand. I'm gonna attack with your 1/1 {royal assassin} which you don't want to do, I'm gonna {lightning bolt} your {Phyrexian obliterator} and make YOU sacrifice 3 permanents and murder your other 2 creatures. You still want me to keep going?

Not to mention if they're playing blue and happen to have a "search your library," then you cast {Nevermore}, {Praetor's Grasp}, {Cranial Extraction}, etc...

Really nice when they use one of the  {Pact of Negation} type cards
