{Thraban Doomsayers} generates humans, and a few cards (including the one Double-O posted) make Knights, but I don't think there are any tokens there are both humans and knights at the same time.

What exactly are you looking for these token generators for? If you're looking for white tokens in general, I recommend looking at the many soldier generators out there ({Captain of the Guard}, {Martial Coup}, {Nomads' Assembly}, {Conqueror's Pledge}) or Angels ({Luminarch Ascension}, {Entreat the Angels}). If you need Knights specifically, though, those probably won't be as helpful.
