If a creature comes into play tapped and attacking {Geist of Saint Traft} for example would they count towards the counters placed on {Gideon's avenger} or not? Ran into this last night and myself and friend were stumped.

No because it enters tapped, so it did not become tapped, is was tapped for as long as it existed until you untap it.
