So when people attack you can they steal your gems or just gold and elixir? Or just demolish everything you have built?

They can steal a portion of your gold and elixir (and eventually dark elixir). By destroying everything they simply get more trophies.

Ok, so it's safe to invest in gems then. As they cost real monies, I was thinking if I did that early, I can get the multipliers when I complete one of the tasks on the side and effectively make it more beneficial. Would this be a safe bet?

The safest place to spend your gems is on builders. Especially early on.

Yeah I haven't even finished the campaign thing, just continually upgrading my mines and elixir fountain things.

The Campaign will take some time, the levels get pretty brutal, and the payoff isn't worth it after a certain point tbh 😄

What should I do with 500 gems?

Edit: I guess im asking if I should buy a pack of DGM or some gems.
