Does this mean, for example, if I have 5 lands, this will make it so if I tap them all, I'll have 10 mana at my disposal, plus the cards own tap ability?

No, it means all of your lands can tap for whatever color you want. So if you have 5 Islands, you can tap for {B}{U}{G}{R}{W} with them if you want.  They still tap for one, but any one

Cards that say "When you tap a land for mana, add X to your mana pool." add more to your mana pool.  See: {Nirkana Revenant}
