You paint on these? That's really good however it's done:) but wouldn't the whole text still have to be legible?

It is not painted.. Those are prints...;) the one who is making them is using print on some sort of foil and then cut the areas where is text and mana symbols on the original cards...

It is not neccessary to have whole text visible if the opponent is able to recognize the card and what the card is doing... The last word is always on judge... I have never had problems with any of alters that I play... But some judges could be more strict than ours...
