Can I cast  {Mindslaver}, copy it with {Mirrorworks} and respond to the copying by using the original Mindslavers ability thus keeping the token copy?

I dont see why not. Theres no time where they will be 2 legendary cards with the same name on the field.

With the trigger of works on the stack, you can sac the original to its ability.
