Could I play Crypt Ghast in a mono black EDH or does the hybrid white black for extort keep me from doing that?

It's reminder text so technically not apart of the colour identity. So yes it is playable

Assuming we are talking about Commander here, Munchlax is correct. But I'll elaborate (because I can :P)

In Commander, you may NOT use a card with ANY mana symbol on it with a color that is NOT on your Commander/General's card. This is called your general's "Color Identity."
- This includes hybrids. For example, a {Boros Reckoner}'s mana symbols are both RED and WHITE, thus in cannot be included in a deck with a color identity that doesn't include BOTH red and white.
- All symbols on the card go towards the card's color identity except for reminder text. This means that {Bosh, Iron Golem} is considered to have a RED color identity, but {Crypt Ghast} is only considered to be BLACK and only black.
