1 x {Boros Elite} - 2/2 enchanted with {ethereal armor}.

Player B

1 x {Miscutter Hydra} 3/3

Player B: attack with the 3/3 hydra
Player A: declare blockers with both the soilders.

Question: hydra will die but can hydra choose both the soilders to die or only can assign damage from the hydra to one soilder?

The player attacking with the hydra gets to choose the damage assigned to the blockers. Assuming they're playing "smart", they'll assign 2 damage to the one, and 1 damage to the other, resulting in all creatures dying.
